INSTRUCTIONS
1. Peel and quarter potatoes. Rinse potatoes in water and drain.
2. Put potatoes in a pot of cold water with a liberal amount of salt.
3. Boil on High and adjust heat to a steady simmer until potatoes are tender.
4. Drain thoroughly and put back in pot on medium-low.
5. Mash with a wire potato masher
6. Add salt, pepper, and a quarter of the butter and mix with masher
7. Add another quarter of butter and mix with whisk. Repeat until all butter is added.
8. Add milk and whip.
9. Season to taste ("and obligatory dash of cayenne")
