INSTRUCTIONS
1. Marinate Tilapia in olive oil, lime juice & garlic.
2. Fry mushrooms in oil. Add slice of red onion, 1 teaspoon minced garlic several tablespoons scallions; and salt, pepper, onion powder & garlic powder to taste. Simmer.
3. Add spinach & bacon bits. Remove mixture from pan.
4. Add Tilapia to pan. Season both sides with salt, pepper, onion powder & garlic powder. Cook until done.
5. Serve fish over spinach & mushroom mixture.
6. Garnish with lemon slices, green olives & fresh parsley or whatever you have!
