INSTRUCTIONS
1. In a large shallow fry pan, pour the ½ Tbsp olive oil to lightly coat the bottom of the pan. On medium heat, cook the sausage, half the shallots, and asparagus. Once fully cooked and browned, about 8-10 minutes, remove sausage and set aside.
2. In the pan, add the rest of the oil, shallots, and rice. Stir the rice to fully coat with the oil then add 1 cup of the stock and bring to a boil. Stiring frequently, cook until the rice has absorbed all of the stock. Slowly to add the stock a ½ at a time cooking until fully absorbed each time before adding more.
3. Once all the stock is cooked and the rice is tender, add back in the sausage and vegetables. When everything is hot and cooked, remove from the heat and serve immediately.
