INSTRUCTIONS
1. Preheat oven to 400o F. Drizzle 1 tablespoon oil over the garlic bulbs and wrap them tightly in a foil pouch. Bake 30 to 40 minutes until golden and very soft. Remove from oven and set aside to cool
2. In a large saucepan sautee onion in 3 tablespoons oil over medium high heat until soft and lightly golden, 4 to 6 minutes. Add minced garlic and cook, stirring, for 1 minute.
3. Add the tomato paste, salt, black pepper, wine, crushed red pepper and Italian seasoning; cook for 1 minute. Add peeled plum tomatoes, crushing with your hands as you place them in the saucepan along with their juice. Stir to combine and bring to a boil. Reduce heat to simmer and cook for 20 minutes, stirring occasionally.
4. Remove garlic cloves from peel and stir into sauce.; Add basil and continue simmering for 30 to 45 minutes or until the flavors have blended.
5. Serving Option: Serve over pasta of your choice.
