INSTRUCTIONS
1. Place the oatmeal in a food processor or blender and pulse into fine crumbs You should have about 1 ½ cups ground oatmeal. Leave in the processor and add the raisins, dried fruit (if you are using apricots, chop them betore adding them to the food processor) and nuts and pulse to break up.
2. Set aside.
3. In a maxing bowl, cream together the sugars and shortening/butter until fluffy.
4. Add the egg, water or juice, VANILLA, salt, CINNAMON, CLOVES, baking soda and flour and mix well.
5. Fold in the oatmeal mixture.
6. Let sit for 15 minutes for the oatmeal to absorb the liquid. During this time, heat the oven to 350 deg. If the batter has become very stiff, add 1-2 TB more water or juice.
7. Drop the batter by the tablespoon onto the greased cookie sheets, flatten slightly and bake at 350 deg for 10-12 minutes.
