INSTRUCTIONS
1. Place the flours, eggs, oil and 1 teaspoon (5 ml) salt into a stand mixer bowl.
2. Using a dough hook, knead for 5 minutes once all the flour has been picked up.
3. Tip the dough out onto a work surface and bring together with your hands.
4. Wrap in cling film and leave to rest for 20 minutes.
5. Extrude the pasta using your chosen die and toss in semolina.
6. Bring a large pot of water to the boil.
7. Once boiling add the rest of the salt.
8. Add the pasta and boil for 5 minutes.
9. Remove using a slotted spoon and add to your sauce.
10. Toss to coat the pasta and serve.
