Mandarin Orange Cake

A moist and fluffy cake recipe made with a cake mix and mandarin oranges topped with the famous cool and creamy icing made with crushed pineapple, pudding mix and cool whip. Also known as Pig or Pea Pickin' Cake, Sunshine Cake and Ambrosia Cake.

INGREDIENTS
  • [Cake]
  • 1 box yellow cake mix
  • 4 eggs
  • ½ cup vegetable oil
  • 1 11-oz can mandarin oranges, with juice
  • [Frosting]
  • 1 20-oz can crushed pineapple, with juice
  • 1 Lrg box instant vanilla pudding mix (5.1-oz)
  • 1 16-oz carton frozen whipped topping, thawed
  • [Garnish]
  • 1 11-oz can mandarin oranges, drained well
  • [Optional]
  • Toasted Coconut

    • INSTRUCTIONS
  • [For Cake]
  • 1. Grease and flour three round cake pans and set aside.
  • 2. Combine wet ingredients (including oranges with juice) then beat on medium speed with an electric mixer until thoroughly combined.
  • 3. Add cake mix then beat on low speed for two minutes.
  • 4. Pour evenly into cake pans then bake per cake mix manufacturer's instructions.
  • 5. Cool cakes completely.
  • [For Frosting]
  • 6. With a rubber spatula or with the paddle attachment of an electric mixer set on low, gently fold together all frosting ingredients until thoroughly combined.
  • 7. Garnish with drained mandarin oranges.
  • 8. Refrigerate until ready to serve.

  • 9. Garnish with toasted coconut prior to garnishing with mandarin oranges.
