INSTRUCTIONS
1. Wash the escarole VERY well. Keep washing leaves until water comes clean.
2. Boil greens in a very large pot for about 1 hour or until tender. Throw out escarole water. (It is very bitter). Drain escarole well and set aside in bowl.
3. Boil ham bone or beef shin until done (about 1 hour).
4. In Microwave cook sliced carrots and chunks of celery until done.
5. Add salt and pepper to soup water and add well-drained cooked escarole to meat water. Add sliced carrots and chunks of celery to meat water (it is now soup).
6. Add chunks of pepperoni and any left over ham pieces and cook for about 15 minutes.
7. Add grated Parmesan cheese and let set in pot until ready to serve.
