INGREDIENTS
3 lbs whole chicken, giblets removed
1 tsp salt
1 pepper
1 Tbsp onion powder
½ cup butter, divided
2 stalks celery, leaves removed, cut into sticks
INSTRUCTIONS
1. Preheat oven to 350 °F.
2. Place chicken in a roasting pan and season generously inside and out with salt and pepper.
3. Sprinkle inside and out with onion powder.
4. Place 3 tablespoons butter in the chicken cavity along with the celery.
5. Arrange dollops of the remaining butter around the chicken's exterior and under the skin.
6. Bake uncovered 1 hour 15 minutes in the preheated oven, to a minimum internal temperature of 180 °F.
7. Remove from heat and baste with melted butter and drippings.
8. Cover with aluminum foil, and allow to rest about 30 minutes before serving.
