INSTRUCTIONS
1. Preheat oven to 400 degrees
2. Sprinkle roast with kosher salt, ground pepper and rosemary, I like quite a bit of seasoning, but coat to your preference.
3. Place roast fat side up on roasting pan with rack.
4. Roast uncovered for about 15 minutes at 400 degrees until a nice golden crust forms.
5. Reduce heat to 350 degrees and continue to roast uncovered for about 11/2-2 hours and reaches internal temperature of 160 degrees**
6. Let rest 10-15 min
