INSTRUCTIONS
1. Wash escarole and set in large pot. Soak in cold salt water for about 5-10 minutes.
2. Remove escarole and dump water.
3. Return escarole to pot and fill with enough cold water to cover/float escarole. Move escarole around in water to loosen dirt and sand.
4. Empty water again and repeat above procedure until escarole is completely clean and no sand is left at bottom of pot (about 3 repetitions). Put clean escarole in pot with water and boil until tender, about 10 min. Cut up 1 pound of Italian sausage and brown in frying pan. Set sausage aside.
5. Brown garlic in leftover sausage grease. To frying pan, add 1 cup of water, cooked escarole, salt and pepper. Simmer for 5 minutes and then add browned sausage.
6. Cover and simmer for 1 hour.
