1. Grill; Closed

2. Two-minute SEAR (with 450 F as the default). Put the steak(s) on the preheated lower grill plate. Using the cover height adjuster, set the upper plate so it is just sitting on top of the steak, but not pressing it.
3. Steak Doneness. 1" thick steak 1.5" thick steak 2" thick steak
4. Rare (125°F). SEAR + 1-2 mins. SEAR + 2-3 mins. SEAR + 5-8 mins
5. Med Rare (135°F). SEAR + 2-4 mins. SEAR + 3-5 mins. SEAR + 8-12 mins
6. Med (145°F). SEAR + 4-5 mins. SEAR + 5-6 mins. SEAR + 12-18 min
7. Med Well (155°F). SEAR + 5-6 mins. SEAR + 6-7 mins. SEAR + 18-25 mins
8. Well (160°F+). SEAR + 6 mins +. SEAR + 7 mins +. SEAR + 25 mins +.
