INSTRUCTIONS
1. Lightly roast corn
2. Slice corn kernels of cobs
3. Chop cranberries
4. Add corn and cranberries to mixing bowl
5. Chop herbs and add to bowl
6. In a second bowl, make batter by combining flour, eggs, baking powder, salt and milk.
7. Whisk batter to somewhat thick consistency.
8. Add corn and cranberry mixture to batter as well as some chives.
9. Mix batter well. Finished batter should be thick like for drop biscuits.
10. Add oil to griddle and place drops of batter onto it.
11. Gently flip pancakes once and cook through.
12. Serve pancakes.
