INSTRUCTIONS
1. Skin chicken thighs, Marinate for 30 minutes or longer in vinegar, oil, parsley, garlic, salt and pepper. Cook chicken mixture for approximately 1 hour or until chicken is browned.
2. In pot on stove add 1 chopped onion, 1 can mushrooms with juice and 5-6 cut up vinegar peppers with some of the pepper juice. As chicken cooks pour off some of the fat into the pot on stove. Last 15-20 minutes of cooking, pour pepper mixture over chicken and mix thoroughly.
3. Serve over white rice.
