INSTRUCTIONS
1. Prepare boneless breast of chicken (1 per person) by slicing in half, making 2 flat pieces. Brown lightly in olive oil and set aside.
2. After all chicken has been browned, in same pan, add can of sliced mushrooms, liquid and all. Simmer. Add salt and pepper to taste, ½ teaspoon basil, a pinch of rosemary, 1 tablespoon of butter and about ¼ cup of Marsala wine. Also add ½ cup of water.
3. Let this simmer while preparing chicken in pan.
4. In baking dish, place ½ chicken breast, 1 slice fried eggplant, 1 very thin slice of Mozzarella cheese. Place other half of chicken breast on top. Put 1 slice of Prosciutto, 1 slice of Mozzarella and top with another slice of fried eggplant. Follow this procedure with the other chicken breasts.
5. When finished, pour sauce over all and bake in 350 6. 375 degrees oven until lightly brown. If pan gets too dry .add a little more water.
