Basic Spice Rub

An all-purpose spice blend is one of the secrets to successful outdoor cooking. Rubbed onto chicken, pork or salmon before grilling, this mixture provides lots of flavor for just a few seconds of effort. Toasting the spices before grinding them really enhances the flavor of the rub.

Chef's Tip: If you don't have either a mortar and pestle or a spice grinder, you can crush the toasted cumin and fennel with a heavy pan. Place the cooled seeds on a work surface and use the bottom of a small, clean, heavy fry pan or saucepan to crush them coarsely.
