INSTRUCTIONS
1. Preheat oven to 375°F.
2. In a bowl, place the apple slices and lemon juice. Cover the slices with water and microwave for about 3 minutes, or just until the slices are flexible but not soft.
3. In a small bowl mix the apricot preserve and water. Set aside.
4. Roll out the puff pastry thin, less then 1/8". Using a pizza cutter, cut the pastry dough into approximately 3" by 12" strips (you should get 6 strips out of the pastry sheet)
5. Spread a small amount of the preserve mixture on the strips of pastry dough, and place apple slices horizontally along the center of the strips, slightly over lapping. Sprinkle with ground cinnamon. Take the bottom flap and fold up the center of the apple slices and roll up.
6. Place the rolled up apple roses in a greased muffin tin.
7. Bake for 35-45 minutes.
8. If you desire, sprinkle the roses with confectioners sugar before serving. Serve warm.
