INSTRUCTIONS
1. Prepare a batch of pizza dough (see recipe) by hand or using a bread machine. You will need a pot with a large opening to put the vegetable oil in. A Wok is the best, but a cast iron stew pot or Dutch oven can be used as well. Fill the Wok with about 2 or 3 inches of vegetable oil (about 1 or 2 quarts). Over a medium flame, heat the oil. To test temperature, sprinkle a few drops of water into oil. If the water drops sizzle off, temperature is correct. The oil should not be boiling.
2. Tear off silver-dollar sized chunks of pizza dough. Flatten slightly by pulling edges of dough chunks. Carefully place chunks into the oil and let cook until bottom and sides are golden brown. Using a slotted spoon, turn the dough over and let the bottom side cook to same golden brown color. As chunks are done, take them out and place on a paper-towel lined plate to absorb excess oil.
3. Serve chunks hot with a selection of sliced Italian hard meats and cheeses. Our favorites are pepperoni, salami, provolone, roasted red peppers, etc.
